These baked apples are a wonderful, versatile meal solution, and can be enjoyed for breakfast, dessert, or as a snack. Pick your favorite apples, remove the core, and drizzle with olive oil and honey (or maple syrup). Sprinkle with a little bit of cinnamon and bake until tender…it’s that simple. The baked apples, once cooled, are then topped with plain Greek yogurt and granola. We like drizzling a little of the reserved pan juices over the entire dish before eating.
Baked apples will keep, refrigerated, for 2-3 days.
Tip: Honey makes for great-tasting, caramelized goodness when baked, but it also loses nutritional value in the process, so keep this in mind.
Ingredients
4 each (850 g) apples, cored
2 tablespoons (30 ml) olive oil
2 tablespoons (30 ml) honey or agave (or maple syrup)
1/2 teaspoon (1 g) ground cinnamon
7 oz. (200 g) plain Greek yogurt
1 cup (100 g) granola
Preparation
- Preheat oven to 375°F or 190°C.
- Line a casserole dish with aluminum foil. Add apples to the casserole dish and drizzle with olive oil and honey/agave/maple syrup. Season with cinnamon and cover the casserole dish with additional foil.
- Bake apples for 30-40 minutes or until tender. Remove from the oven, uncover, and set aside to cool.
- Once cooled, top apples with yogurt and granola. Drizzle topped apples with pan juices before serving.
