Keto Chicken fillet with Garlicky Cream Sauce

 INGREDIENTS


boneless chicken fillet 
Kosher salt
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
8 oz. baby bella mushrooms, sliced
cloves garlic, minced
1/2 c. heavy cream
1/2 c. freshly grated Parmesan
1 tsp. dried oregano
Pinch crushed red pepper flakes
3 c. packed baby spinach

DIRECTIONS

  1. 1:Season chicken fillet on both sides with salt and pepper. In a large skillet over medium heat, heat oil. Add chicken fillet and cook until golden and cooked through. Remove from skillet and place on a plate to keep warm.
  2. 2:Add mushrooms to skillet and cook until softened, 5 minutes, then add garlic and cook until fragrant, 1 minute more. 
  3. 3:Add heavy cream, Parmesan, oregano, and a pinch of red pepper flakes. Season with salt and pepper. Bring sauce to a simmer and cook until thickened, about 3 minutes. Add spinach and cook until wilted, 2 minutes more. 
  4. 4:Return chicken fillet to skillet and cook until warmed through, 5 to 10  minutes.
